The ingredients needed to make Pickled Watermelon Rind:
  1. Take 1 whole watermelon rind (red part and skin removed). You can leave a thin layer of the red part to add sweetness, I really like it this way
  2. Prepare 600 ml water
  3. Make ready 600 ml fish sauce
  4. Take 600 ml white vinegar
  5. Take 1 garlic bulb (sliced)
  6. Make ready Chilli to taste
  7. Make ready 1/2 cup sugar
Steps to make Pickled Watermelon Rind:
  1. In a pot, add water, vinegar, fish sauce and sugar. Bring to a boil.
  2. Leave pickling liquid aside to cool.
  3. While waiting for liquid to cool, prepare your watermelon. Remove the red flesh (you can consume this 😊) and green skin. Cut the watermelon rind into size as per the recipe picture. Leave aside.
  4. Chop garlic into slices.
  5. Chop chillies (I prefer birds eye) into small pieces.
  6. Use available pickling jars (you may need 2-4 depending on its size) and place the watermelon rind, garlic and chillies divided evenly until it reaches near the top.
  7. Fill the jar with the pickling liquid (liquid should be cool after 45mins).
  8. If needed, use a fermentation weight to hold down the ingredients (I don’t often do this and it turns out fine).
  9. Place pickled watermelon rind jars in the fridge and leave for at least 2 days.
  10. Enjoy as a side dish with rice or add to Vietnamese or Thai salads!
